Buttery Marmite Spaghetti With Fried Egg

Ingredients

  • 200g spaghetti
  • 30g butter
  • 1 to 2 tsp Marmite
  • 30g parmesan or cheddar, finely grated
  • 2 eggs
  • 1 tsp oil
  • Black pepper
  • Parsley or spring onion, optional

Method

  1. Cook the spaghetti in boiling water. Reserve a mug of pasta water before draining.
  2. Melt the butter in the pasta pan over a low heat.
  3. Stir in 1 tsp Marmite and a splash of pasta water until smooth.
  4. Add the spaghetti and cheese. Toss until glossy, adding more pasta water if needed.
  5. Fry the eggs in a separate pan.
  6. Serve the spaghetti with a fried egg and black pepper on top.

Notes

Start with 1 tsp Marmite because it is salty and strong. Add more only after tasting. Parmesan makes the sauce sharper, while cheddar makes it more comforting.

Storage: This is best eaten fresh. Leftover pasta can be refrigerated and reheated with a splash of water until piping hot.
